Sweet Potato Casserole


4-5 large sweet potatoes
1 cup sugar
½ cup melted butter
2 well beaten eggs
1 tsp vanilla
1/3 cup milk
1 bag marshmallows


Preheat oven to 400 degrees. Wash and prick about 4-5 large sweet potatoes. Line a baking sheet with parchment or foil and bake potatoes for 45-60 minutes or until fork tender or squishy when squeezed. Let cool. Can be done a day or so ahead. You could also use canned sweet potatoes or yams that equal 3 cups when mashed.

Scoop out the potatoes and mash. Should equal at least 3 cups. Combine with 1 cup sugar, butter, eggs, vanilla, and milk. Mix well. Put into a 2 quart casserole dish. Bake at 350 degrees for 25 minutes. Top with marshmallows for the last 10-15 minutes until browned slightly.
