1 cup pineapple juice
1 cup orange juice
¼ cup soy sauce
3 T firmly packed dark brown sugar
1 large pineapple cut into chunks
12 slices of bacon, cut crosswise into thirds
Soak 36 toothpicks in water for 30 minutes; drain and set aside. In a large bowl, combine pineapple juice, orange juice, soy sauce, and brown sugar. Add pineapple, cover, and chill for 30 minutes. Drain pineapple, discarding marinade.
Preheat over to 400 degrees. Line a rimmed baking sheet with aluminum foil. Wrap each pineapple chunk with a 1/3 slice of bacon and secure with a toothpick. Place on prepared baking sheet and bake 30-35 minutes, or until baking is crisp. Serve warm.
